Spiced Chocolate Molten Lava Cakes

Oh my! This is decadence on a plate. But guess what? This splurge dessert is dead simple and can be prepped a day in advance and kept in the refrigerator, which makes it perfect for wowing guests.

Ingredients
- 5 ounces bittersweet (not unsweetened) chocolate, chopped
- ½ cup + 2 tbsp butter
- 3 large eggs
- 3 large egg yolks
- 1½ cups icing sugar
- ½ cup all-purpose flour
- 2 tsp cinnamon
- ¼ tsp allspice
Directions
- Preheat oven to 450°F.
- Butter six ovenproof ramekins (6 oz.) generously.
- Stir chocolate and butter in heavy medium-sized saucepan over low heat until melted. Remove from heat.
- Whisk eggs and egg yolks in large bowl to blend. Whisk in sugar, melted chocolate mixture, flour and spices.
- Pour batter into dishes, dividing equally.
- Bake cakes until sides are set but centre remains soft and runny, about 12 minutes (or a few minutes more if the batter was cold). Let sit for 2 minutes before running a small knife around cakes to loosen. Immediately turn cakes out onto plates.
