Spiced Chocolate Molten Lava Cakes

Oh my! This is decadence on a plate. But guess what? This splurge dessert is dead simple and can be prepped a day in advance and kept in the refrigerator, which makes it perfect for wowing guests.

Serves 6

Prep: 10 min.
On the table: 25 min.

Ingredients

  • 5 ounces bittersweet (not unsweetened) chocolate, chopped
  • ½ cup + 2 tbsp butter
  • 3 large eggs
  • 3 large egg yolks
  • 1½ cups icing sugar
  • ½ cup all-purpose flour
  • 2 tsp cinnamon
  • ¼ tsp allspice

Directions

  • Preheat oven to 450°F.
  • Butter six ovenproof ramekins (6 oz.) generously.
  • Stir chocolate and butter in heavy medium-sized saucepan over low heat until melted. Remove from heat.
  • Whisk eggs and egg yolks in large bowl to blend. Whisk in sugar, melted chocolate mixture, flour and spices.
  • Pour batter into dishes, dividing equally.
  • Bake cakes until sides are set but centre remains soft and runny, about 12 minutes (or a few minutes more if the batter was cold). Let sit for 2 minutes before running a small knife around cakes to loosen. Immediately turn cakes out onto plates.
