Vegetable Fried Rice
Serves: 4
Ingredients
- 3 tbsp vegetable oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 garlic clove, minced
- 2 cups cooked white or brown rice
- ½ cup green peas
- 1 carrot, peeled and finely shredded
- 2 large eggs
- 3 tbsp soy sauce
Directions
- Heat 2 tbsp of the oil in a wok over medium-high heat. Add the onion, pepper and garlic. Cook, stirring constantly, until softened, about 3 minutes.
- Add rice, peas and carrot. Cook, stirring constantly, until vegetables are tender, about 4 minutes.
- Push the cooked ingredients to the edge of the wok. Add the remaining 1 tbsp oil to the centre of the wok. Pour in the eggs and stir until scrambled. Slowly stir in the rice mixture until blended.
- Add soy sauce. Cook, stirring constantly, until well blended, about 1 minute. Serve hot.
