Vegetable Fried Rice


Serves: 4

Ingredients

  • 3 tbsp vegetable oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 garlic clove, minced
  • 2 cups cooked white or brown rice
  • ½ cup green peas
  • 1 carrot, peeled and finely shredded
  • 2 large eggs
  • 3 tbsp soy sauce

Directions

  • Heat 2 tbsp of the oil in a wok over medium-high heat. Add the onion, pepper and garlic. Cook, stirring constantly, until softened, about 3 minutes.
  • Add rice, peas and carrot. Cook, stirring constantly, until vegetables are tender, about 4 minutes.
  • Push the cooked ingredients to the edge of the wok. Add the remaining 1 tbsp oil to the centre of the wok. Pour in the eggs and stir until scrambled. Slowly stir in the rice mixture until blended.
  • Add soy sauce. Cook, stirring constantly, until well blended, about 1 minute. Serve hot.
