Winter Slaw

Celery root, also known as celeriac, is a crispy root vegetable with a parsley and celery aroma. It is excellent eaten raw or cooked. To avoid discolouration, grate just before adding to vinaigrette.

Ingredients
  • 1/4 cup vegetable oil
  • 1/4 cup apple cider vinegar
  • 3 tbsp brown sugar
  • 2 tsp kosher salt
  • 1 tsp poppy seeds
  • 6 cups Savoy cabbage, cored and finely shredded
  • 1 1/2 cups celery root, peeled and coarsely grated
  • 1 cup carrot, coarsely grated
  • 1/4 cup red onion, finely chopped
  • Directions

    In a small bowl, whisk oil, vinegar, sugar, salt and poppy seeds together until well blended and sugar is dissolved.

    In a large bowl, pour vinaigrette over remaining ingredients. Toss until thoroughly blended. Chill at least 30 minutes to allow flavours to meld. Serve alongside stuffed burgers.
