Triple Terrific Caesar Chicken Fingers

Chicken fingers are far from boring when dipped in garlicky dressing and coated with the tasty three-some of Parmesan cheese, sesame seeds and panko breadcrumbs. You can switch up your salad dressing or even use barbecue sauce to get your crumbs to cling. A spoonful of flaxseeds in place of sesame seeds will boost the omega factor.

“I never thought I would come home from school and get to do something so cool like making my own chicken fingers.” Marisa, 5, Cambridge, Ont.

Ingredients
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cup panko breadcrumbs
  • 1/4 cup sesame seeds
  • 1/3 cup Caesar salad dressing
  • 1 1/2 lb chicken thighs, cut into 30 1-inch thick strips
  • Directions
  • 1.

    Preheat oven to 425-deg. F. Line a sheet pan with foil.

    Combine cheese, panko and sesame seeds in a wide, shallow bowl

  • 3.

    Pour salad dressing into a bowl. Dredge chicken thighs in the salad dressing to coat.

  • 4.

    Transfer chicken to panko mixture, pressing chicken to coat completely. Set on the pan and continue breading process with all fingers.

  • 5.

    Bake 10 minutes then turn. Bake 5 minutes longer or until chicken is lightly golden brown. For easy eating, skewer each chicken finger on a bamboo stick and serve.
