Saucy and Smokey Pork Burgers in Tortillas

Stuck in a burger rut? These sure-to-be-a-hit pork burgers are covered in gooey cheese and encased in a crispy tortilla. For little appetites, make smaller patties. We love the idea of using a tortilla in place of a bun. It's less filling than a regular burger bun and it keeps everything tucked inside!

I loved the smokiness of the sauce and we also liked the crispiness of the tortilla. I’m not a big fan of burger buns, so this is a great alternative. Raya said, “If you like it as much as I do, raise your hand!

Servings
Makes 6 Burgers
Prep Time
Prep time: 5 minutes + chilling time, On the Table: 25 minutes
Ingredients
  • 1/4 cup ketchup
  • 1/2 tsp chipotle pepper sauce or 1/8 tsp cayenne, to taste
  • 2 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • 1-1/2 lbs lean ground pork
  • 3 slices bacon, finely chopped
  • 1 tsp smoked paprika or 1 tsp liquid smoke
  • 1 tsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • 6 slices Monterey jack cheese
  • 6 large tortillas
  • guacamole (optional)
  • Directions
  • 1.

    Stir together ketchup, chipotle pepper sauce, vinegar, mustard and brown sugar in a bowl until combined well. Set aside.

  • 2.

    In another bowl, mix together pork, bacon, paprika, sugar, garlic powder, salt and pepper. Form into 6 burgers. Cover with plastic wrap and chill for 20 minutes or up to 6 hours in the refrigerator.

  • 3.

    Preheat barbecue to high.

  • 4.

    Oil grill, then cook patties (lid down if using a gas grill or uncovered if using charcoal) for 8 to 10 minutes. Flip over and brush cooked side of each burger with sauce. Close lid and cook for another 7-8 minutes. Reduce heat if needed.

  • 5.

    Flip burgers, brush with more sauce, then top with cheese. Place burger in the middle of a tortilla shell and wrap to enclose. Place burgers seam-side down and close lid. Flip, once toasted, about 2 minutes per side.

  • 6.

    Serve with guacamole, if desired.
