Prick potatoes with a fork and bake at 450 °F for 45 minutes.
When cool enough to hold, cut each in half then scoop out insides leaving enough potato to keep its shape.
Mix scooped potato with butter, sour cream, cheddar cheese and salsa.
Scoop back into potatoes and bake for another 15-20 minutes or until cheese is bubbly and the skins are crisp.
