Salsa and Cheese Baked Potatoes

Salsa is the perfect go-to snack but it's also a great way to add flavour in a pinch without a lot of chopping and seasoning.

Ingredients
  • 3 large russet potatoes
  • 2 tbsp butter
  • 1/2 cup sour cream
  • 1 cup of cheddar cheese
  • 1/2 cup salsa
  • Directions
  • 1.

    Prick potatoes with a fork and bake at 450 °F for 45 minutes.

  • 2.

    When cool enough to hold, cut each in half then scoop out insides leaving enough potato to keep its shape.

  • 3.

    Mix scooped potato with butter, sour cream, cheddar cheese and salsa.

  • 4.

    Scoop back into potatoes and bake for another 15-20 minutes or until cheese is bubbly and the skins are crisp.
