“Our four-year-old, Madeleine, enjoyed measuring—and sampling—the ingredients for these, especially the tuna!” –Jules C., Father of Madeleine and Jule, 2, of Vancouver
In a medium bowl, mash together mashed potato, tuna, 1/4 cup (50 mL) bread crumbs, the ketchup, lemon rind and cayenne until fairly smooth.
Stir in peas and green onions. Form into 4 even-size patties, each about 1/2 inch (1 cm) thick; coat evenly in remaining bread crumbs
In a large non-stick skillet, heat oil over medium heat. Add burgers; cook for about 3 minutes per side, until golden brown and hot throughout.
Meanwhile, toast burger buns. Serve burgers in buns with lettuce, tomato and mayonnaise.
