Polka-Dot Tuna Burgers

The cute polka-dot peas in these easy “burgers” are a great way to coax nutrition-packed tuna into your kids.

Ingredients
  • 1 cup (250 mL) mashed potatoes (leftover, instant or bought)
  • 1 can (170 g) water-packed tuna, drained
  • 1/3 cup (75 mL) dry bread crumbs
  • 2 tbsp (25 mL) ketchup
  • 1/2 tsp (2 mL) grated lemon rind
  • Pinch cayenne
  • 1/2 cup (125 mL) frozen peas, thawed and drained
  • 2 green onions, finely chopped
  • 1 tbsp (15 mL) olive oil
  • 4 burger buns
  • shredded lettuce, sliced tomato, mayonnaise or tartar sauce
  • Directions
  • 1.

    In a medium bowl, mash together mashed potato, tuna, 1/4 cup (50 mL) bread crumbs, the ketchup, lemon rind and cayenne until fairly smooth.

  • 2.

    Stir in peas and green onions. Form into 4 even-size patties, each about 1/2 inch (1 cm) thick; coat evenly in remaining bread crumbs

  • 3.

    In a large non-stick skillet, heat oil over medium heat. Add burgers; cook for about 3 minutes per side, until golden brown and hot throughout.

  • 4.

    Meanwhile, toast burger buns. Serve burgers in buns with lettuce, tomato and mayonnaise.
