Ingredients
  • 4 6-oz boneless haddock fillets
  • 1/4 cup pesto
  • 8 slices prosciutto (or enough to wrap fish entirely)
  • Directions
  • 1.

    Marinate fish in pesto for up to an hour.

  • 2.

    Preheat barbecue to high.

  • 3.

    Wrap each piece of fish with prosciutto, covering completely.

  • 4.

    Lightly brush prosciutto with oil to prevent fish from sticking to grill.

  • 5.

    Grill fish for 5 minutes per side, or until fish flakes slightly. Reduce heat slightly if you are getting flare-ups from the barbecue.
