Pancake Mouse

A tiny mouse says good morning to you! To transform everyday pancakes into a cute and yummy pancake sandwich, use a sugar-free pancake mix and layers of crispy bacon, scrambled eggs, cheese, and fresh lettuce.

Ingredients
  • 2 pats of butter
  • about 1 cup pancake batter, made from a sugar-free mix
  • 2 tsp ketchup or other condiments
  • 2 eggs, beaten
  • 1 slice cheddar cheese
  • 1 or 2 slices bacon
  • 2 lettuce leaves
  • 1 small piece of ham or cheese
  • 1 chicken or quail egg, hard-boiled and peeled
  • 1 piece nori (seaweed)
  • Directions
  • 1.

    Warm 1 pat of butter in a pan over medium- high heat. Pour batter into 3 small circles. Once the bottoms are firm and golden brown, flip pancakes with a spatula. Grill the other side. Move pancakes onto a paper towel to cool.

  • 2.

    Warm another pat of butter in a pan over medium-low heat. Add eggs and scramble until cooked through; stir in cheese or other extras if desired. Grill bacon about 2 minutes per side, or until slightly brown and crispy.

  • 3.

    Assemble the sandwich: Spread the top of a pancake with ketchup or other condiments, layer with scrambled eggs and lettuce. Add the next pancake, topped with more lettuce, a slice of cheddar cheese, and bacon folded in half (to fit). Top with the third pancake.

  • 4.

    Assemble a pancake sandwich or another snack for your mouse to perch on.

  • 5.

    Using a fat straw or bottle cap, punch two circles out of ham. Put them into a plastic zip- top bag and freeze for a few minutes; they'll be stiff and much easier to insert into the egg.

  • 6.

    Slice off a small sliver of the egg from top to bottom, so it will lay flat on the pancake. Make a slit almost halfway through the egg. Using tweezers, gently insert the circles into the slit in the egg, making two mouse ears.

  • 7.

    Use scissors or a paper punch to cut 2 eyes and a wee little mouse nose out of nori. Gently apply facial features to the egg.
