Newfoundland’s Spectacular Snowballs

Prep to table: 10 minutes + chilling time
Ingredients
  • 3/4 cupbutter
  • 3 cupssugar
  • 1 1/4 cupsmilk
  • 3 cupslarge rolled oats
  • 1 cup unsweetened fine coconut
  • 3/4 cupcocoa, sifted
  • Directions
  • 1.

    1 Melt butter in a large saucepan. Stir in sugar and milk. Bring to a boil and reduce temperature slightly to prevent boiling over. Once mixture begins to boil it is very important not to stir.

  • 2.

    Continue to cook for about 10 minutes, or until mixture reaches about 230-deg. F on a candy thermometer. You can also test by dropping some of the mixture in cold water. If it forms a soft ball, it is ready.

  • 3.

    While the mixture comes to temperature, mix together oats, coconut and cocoa.

  • 4.

    Add the boiled mixture to the dry ingredients and mix until well combined. Chill in the bowl for about 40 minutes or until it can be rolled into 1-1/2-inch balls.

  • 5.

    Roll the balls in coconut to coat.
