My First Sweet and Sour Pork

Makes 2 portions
Ingredients
  • 2 tbsp ketchup
  • 1 1/2 tsp soy sauce
  • 2 tbsp pineapple juice (from the can)
  • 1 tsp cornstarch
  • 1 tbsp sunflower oil
  • 1/2 cup ground pork (or chicken)
  • 2 scallions, thinly sliced
  • 1/4 red bell pepper, diced
  • 1 canned pineapple ring, diced
  • 2 tbsp canned corn, drained
  • Directions
  • 1.

    Mix together the ketchup, soy sauce, pineapple juice, cornstarch, and 4 tbsp water in a small bowl. Set this sauce mixture aside.

    Heat the sunflower oil in a wok and stir-fry the pork or chicken for 3 minutes, breaking it up well as you cook.

    Add the scallions and red pepper and cook until the vegetables are soft and the pork is browned, about 3 minutes longer. Add the pineapple, corn and sauce mixture and cook until the sauce is bubbling and thickened, 1-2 minutes. Serve with rice.
