“I never would have thought to use shredded wheat in a meat loaf recipe. It worked very well and everyone liked it.”
Melissa and Paul Currie, mom and dad of Julianna, 15, Lillian, 13, and Quinten, 9, in Duncan, B.C.
Preheat oven to 375 F. Spray a muffin tin lightly with oil.
In small bowl, mix together jam and mustard.
In a large bowl, combine remaining ingredients until well mixed.
Divide among 8 muffin cups. Bake for 25 minutes, then generously spread jam mixture on top of each loaf.
Continue baking for 10 minutes, until loaves pull away from pan and glaze looks golden.
