Ingredients
12 slices white breadbutter for spreading2 cups chopped cooked chicken breast fillet3/4 cup whole-egg mayonnaise2 tablespoons lemon juice2 tablespoons chopped basil leaves2 tablespoons shredded mint leavessea salt and cracked black pepperwhole-egg mayonnaise, extra, for spreading1/3 cup finely chopped chives
Directions
1.Spread one side of the bread with the butter.
2.Combine the chicken, mayonnaise, lemon juice, basil, mint, salt and pepper.
3.Divide between half the bread slices and top with remaining bread.
4.Cut into small triangles and brush one side with the extra mayonnaise.
5.Press the mayonnaise into the chives and serve.
