Carrot Fries

All the appeal of French fries with the added vitamin A to keep your peepers healthy. And because packed with antioxidants, carrots are a super good food.

Ingredients
  • 2 lbs carrots
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 1 tsp cumin
  • salt & pepper
  • Directions
  • 1.

    Preheat the oven to 400-deg. F with a foil-lined (if desired) sheet pan inside the oven on the middle rack.

  • 2.

    Wash and peel carrots. Trim the top and bottom of each carrot, and cut into fries. Put the carrots in a sealable bag and toss with oil, vinegar and honey. Add cumin, salt and pepper to bag and toss again.

  • 3.

    Transfer contents from the bag to heated sheet pan and bake 25 minutes, turning after 15 minutes. Bake for an additional 10 minutes, until fries are a little crisp at the edges and browned.

  • Nutrients Per Serving
    100 calories, 5 g fat, 48 mg calcium, 288 mg sodium, 14 g carbohydrates, 3 g fibre, 1 g protein. Good source of vitamin A.
