Asparagus, Red Onion and Smoked Salmon Flatbread

This is not your traditional pizza layered with artery-clogging ingredients. Super light and full of flavour, the flatbread can be paired with a salad or a bowl of soup for dinner or cut into appetizer portions for a weekend dinner party. Salmon is packed with Omega-3 fatty acids, which are healthy fats, responsible for benefits such as lowering blood pressure and triglyceride (fat in the blood) levels.

“I love the idea of store bought convenience-type foods with fresh veggies and smoked salmon. Put together, it is so tasty and so fast. My son Isaac is nuts about smoked salmon so he loves anything with it.”

Ingredients
  • 1 pre-baked thin whole wheat flatbread (300g), 11x9-inch
  • 1 tsp olive oil
  • 10 thin asparagus spears, trimmed
  • 1/4 cup Asiago and artichoke dip (or other white dip of your choice)
  • 6 large slices of smoked salmon, cut into strips, 125 grams
  • 3 tbsp red onion slivers
  • 2 tbsp capers

    260 calories, 13 g fat, 198 mg calcium, 680 mg sodium, 26 g carbohydrates, 2 g fibre, 10 g protein. Good source of calcium and iron
