Turkey Sausage Breakfast Casserole

This is delicious served for breakfast but also makes a great light dinner. A simple green salad completes the meal

Leftovers are delicious the next day. Slices of casserole reheat easily for a quick meal.

Ingredients
  • 1 tablespoon olive oil plus more for preparing dish
  • 5 cups cut or torn (1-inch) cubed multigrain bread
  • 8 ounces sliced crimini mushrooms
  • 8 ounces turkey sausage, removed from casings
  • ¼ cup finely diced sweet onion
  • 5 ounces cheddar, grated, divided in 3
  • 1½ cups milk
  • 5 eggs
  • 1 teaspoon grainy mustard
  • 1 teaspoon sea salt
  • 1¼ teaspoons freshly grated black pepper

    Preheat oven to 350°F. Lightly grease a 10-cup (2.5L) baking dish and arrange bread cubes in an even layer over bottom of dish; set aside.

    Set a large nonstick skillet over medium heat and add oil. Add mushrooms and cook, stirring occasionally, until golden brown; about 6 minutes. Season to taste with salt and pepper, transfer mushrooms to casserole dish and return skillet to heat. Add turkey sausage, adding more oil if necessary, and cook for 4 minutes, breaking up with a wooden spoon. Add onions and continue to cook until sausage is cooked through and onions are translucent; about 5 minutes. Transfer to casserole dish; add two thirds of cheese and toss with mushrooms and bread cubes.

    Using a blender or in a large bowl using a whisk, combine milk, eggs, mustard, salt and pepper and mix until blended. Pour egg mixture over bread mixture and sprinkle remaining cheese over top of casserole. Bake until puffed, golden brown and set; about 30 minutes. Let sit 5 minutes before slicing and serving.
