Taco in a Bag

When there just isn’t time to sit down at the table, dinner-on-the-go is as easy as a taco in a nacho chip bag. Kids will love the novelty, and toppings can be adjusted to satisfy even the pickiest of eaters.

Ingredients
  • 1 tbsp olive oil
  • 1 medium onion peeled and thinly sliced
  • 1 tbsp minced garlic
  • 1/2 lb lean ground chicken
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 1 can black beans, rinsed (14 oz)
  • 6 bags 100-calorie-portioned Doritos
  • 1 1/2 cups shredded iceberg lettuce
  • 3 green onions, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 6 tbsp low-fat sour cream, optional
  • 6 tbsp guacamole, optional
  • 6 tbsp chunky salsa, optional
  • 2 tbsp chopped cilantro leaves, optional
  • Directions
  • 1.

    Heat olive oil in a frying pan over medium heat. Sauté onion and garlic until fragrant. Add chicken and spices and continue to sauté for 3 minutes, breaking meat into small chunks with spatula. Add beans; continue to cook for 3–4 minutes, or until chicken is cooked completely.

    Cut each nacho bag open along the side; gently squeeze each bag once to break the chips into bite-sized pieces. Add chicken to each bag and top with remaining in- gredients. Serve with a fork or spoon.
