Sweet Red Onion & Ricotta Tartlettes

Ingredients
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 small red onion, halved and thinly sliced (about 1-1/2 cups)
  • 1/2 tsp granulated sugar
  • 9 green onions, white part only, cut to 2-inch lengths, halved lengthwise.
  • 1 tbsp fresh lemon juice
  • 3/4 cup extra-smooth ricotta cheese
  • 1 tsp finely chopped fresh tarragon.
  • 1/2 tsp finely grated lemon zest
  • 18 frozen tart shells
  • Directions
  • 1.

    Preheat oven to 375 deg. F. In a large skillet beat oil and butter over low heat. Add red onion and sugar, and season with salt and pepper. Cover and cook onion until soft and translucent, about 15 minutes, stirring occasionally. Add green onions and lemon juice; cover and cook another 5 minutes. Remove lid , raise heat slightly and cook until liquid evaporates. Let cool; then separate green onions from red onions and reserve any remaining liquid.

    In a small bowl combine ricotta, tarragon and zest and season with salt and pepper. Place 1 teaspoon ricotta mixture in centre of each tart shell and top with 1 teaspoon red onion mixture.

    Bake until golden and puffed, about 25 minutes. Remove from oven, let cool slightly and serve garnished with reserved green onions.
