Scalloped Potatoes with Applewood Smoked Cheddar

These potatoes are creamy, cheesy goodness on a fork. Smoked cheddar can be found in specialty cheese shops or in some larger grocery stores' cheese aisles.

Ingredients
  • 3 tablespoons unsalted butter, plus more for preparing baking dish
  • 2 1/2 pounds russet potatoes (baking potatoes), peeled and thinly sliced
  • 1 1/2 Cups coarsely grated smoked cheddar cheese, (about 4 oz)
  • 1 1/2 Cups 35% cream
  • 1 Cup milk
  • 1 teaspoon kosher salt
  • 1/4 teaspoons freshly ground black pepper

    Preheat oven to 350°F. Lightly butter a 2-quart shallow baking dish and set aside.

    Layer half the potatoes in the prepared baking dish, overlapping slightly. Sprinkle with half the cheese and layer with the remaining potatoes. Combine the cream, milk, butter and salt and pepper in a saucepan; heat until the mixture begins to bubble. Pour over the potatoes, pressing gently with a wooden spoon to submerge, top with the remaining cheese. Place the baking dish on a baking sheet (to catch any spillovers), tent loosely with aluminum foil and bake for about 1 hour to 75 minutes, or until potatoes are tender. Remove foil during the last 20 minutes of baking to brown top layer of cheese. Let rest briefly, before serving.
