Salmon with Grape Salsa

Ingredients
  • 4 5-oz salmon filets
  • 1 Cup quartered red grapes
  • 1 shallot, minced
  • 1/2 teaspoons salt
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon olive oil
  • Directions
  • 1.

    Heat a non-stick skillet over medium heat. Season salmon with salt and pepper.

  • 2.

    In a small bowl, mix next 5 ingredients and set aside.

  • 3.

    When skillet is hot, add oil and salmon, and sear for about 5 minutes per side. Garnish with grape salsa and serve with a side of orzo or salad.
