Roasted Roots and Fruits

Roasted and spiced root vegetables make an easy side dish and are a perfect complement for Maple Leaf Prime Gourmet Apple Cheddar Pork Chops. Any leftovers can be turned into a quick and delicious soup.

Ingredients
  • 4 Cups prepared vegetables, your choice of carrots, peeled and diced squash, turnip, parsnip, potatoes, sweet potatoes
  • 1 small red onion, peeled and sliced
  • 1 apple/pear/peach/nectarine/plum cored, pitted and cut in segments (choose one)
  • 2 tablespoons vegetable oil
  • 1/2 teaspoons ground five spice powder or ground cinnamon
  • 1/4 teaspoons ground nutmeg
  • pinches ground cloves
  • 2 teaspoons brown sugar
  • 1 tablespoon maple syrup
  • salt and pepper
  • Directions
  • 1.

    Preheat oven to 400 degrees.

  • 2.

    Cut selected vegetables into even pieces approx 1 1/2 inch chunk or sticks, vary the shapes for fun.

  • 3.

    Mix together with red onion and selected fruit in bowl or plastic bag.

  • 4.

    Blend dry spices and sugar together, shake over fruit and vegetables, toss well together with the vegetable oil and spread on baking sheet

  • 5.

    Drizzle over maple syrup and season with salt and freshly ground black pepper.

  • 6.

    Cover with foil then place in the oven and roast for 20 minutes at 400 degrees.

  • 7.

    Remove foil and continue to cook for further 5 to 10 minutes until vegetables are tender.

  • 8.

    To serve, spoon small towers of spiced vegetable mixture onto platters and arrange your selection of meat on tower.

  • 9.
