Ingredients
  • 1/2 Cups freshly grated Parmesan
  • 2 teaspoons all-purpose flour
  • 1 teaspoon finely ground porcini mushrooms
  • Directions

    Parmesan Crisps

  • 2.

    Combine all ingredients in a small bowl.

  • 3.

    Heat a non-stick skillet over high heat. For each crisp, sprinkle a heaping tablespoon of the cheese mixture into skillet. Cook until crisp and cheese has melted. Remove skillet from heat, allow crisp to firm up and then transfer to a rack to cool.

  • 4.

    Place cooked orzo in a large serving bowl and stir in tomatoes and spinach.

  • 5.

    In a small bowl, whisk together remaining ingredients (except eggs), pour over salad and toss. Garnish with hard-boiled eggs and Parmesan crisps.
