Orzo Pasta with Baked Salmon

Ingredients
  • 2 (4- to 6-ounce) pieces salmon
  • 1 Cup green lima beans (or fresh green beans)
  • 1 Cup broccoli florets
  • 1 Cup red bell pepper, chopped
  • 1 teaspoon garlic powder + more for seasoning fish
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 4 Cups orzo pasta
  • Directions

    Preheat the oven to 400°F.

  • 2.

    Season the fish with garlic, salt and pepper, coating it completely.

  • 3.

    Mix vegetables together in another bowl and season with 1 tablespoon olive oil, 1 teaspoon garlic powder, and a pinch of salt and pepper.

  • 4.

    Place 2 (15-inch) long sheets of aluminum foil on a work surface. Divide vegetable mix among the foil sheets. Place 1 piece of salmon over each pile of vegetables. Seal up the foil packets.

  • 5.

    Place the foil packets on a baking sheet. Bake for 20 minutes, or until done. Meanwhile, cook orzo pasta in boiling water (according to package instructions) and season with some salt.

  • 6.

    When pasta is ready, drain and divide between two dishes. Gently place the vegetables and salmon on top of the orzo pasta and serve immediately.

    Nutrients per serving (based on 5 servings): 927 calories, 15 g fat, 57 g protein, 7 g fiber, 139 g carbohydrates. Excellent source of vitamin C, thiamine, riboflavin, folate, vitamin B12, vitamin B6, magnesium, iron, zinc. Good source of vitamin A.
