Ingredients
1 pound fresh ground chicken1 tablespoon olive oil1 large onion, finely chopped2 cloves of garlic, finely chopped1 red pepper, chopped1 can diced tomatoes (28 oz/796 ml), undrained1 can tomato sauce (19 oz/540 ml)1/2 Cups white wine or chicken stock3 Cups (250ml) uncooked macaroni (elbows or ditali work great)2 teaspoons (15ml) oregano, or italian seasoning11/2 teaspoons chili flakes (if desired)salt and pepper to tasteshredded mozzerella, provolone or your favourite cheeseparsley (for garnish)
Directions
1.Sauté the chicken, onions and pepper in large saucepan until the chicken is no longer pink.
2.Stir in the rest of the ingredients, except for cheese and parsley.
3.Bring to a boil, cover and simmer on medium heat for about 20 to 30 minutes, stir it occasionally, (important or pasta will stick) until macaroni is cooked to your liking. Remove from heat let it stand for at least 10 minutes.
4.Serve. Sprinkle each serving with cheese, if desired. Garnish with parsley.
