One-Dish Chicken with Pasta

Easy and delicious, this chicken pasta dish is filled with veggies and even better the next day.

Ingredients
  • 1 pound fresh ground chicken
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 red pepper, chopped
  • 1 can diced tomatoes (28 oz/796 ml), undrained
  • 1 can tomato sauce (19 oz/540 ml)
  • 1/2 Cups white wine or chicken stock
  • 3 Cups (250ml) uncooked macaroni (elbows or ditali work great)
  • 2 teaspoons (15ml) oregano, or italian seasoning
  • 11/2 teaspoons chili flakes (if desired)
  • salt and pepper to taste
  • shredded mozzerella, provolone or your favourite cheese
  • parsley (for garnish)
  • Directions
  • 1.

    Sauté the chicken, onions and pepper in large saucepan until the chicken is no longer pink.

  • 2.

    Stir in the rest of the ingredients, except for cheese and parsley.

  • 3.

    Bring to a boil, cover and simmer on medium heat for about 20 to 30 minutes, stir it occasionally, (important or pasta will stick) until macaroni is cooked to your liking. Remove from heat let it stand for at least 10 minutes.

  • 4.

    Serve. Sprinkle each serving with cheese, if desired. Garnish with parsley.
