Mini Tortilla Pizzas

These speedy pizzas make a great kid-size main meal served with a salad, coleslaw, or veggies and dip.

Ingredients
  • 4 small tortillas (6 to 7 inches/15 to 18 cm)
  • 2 cups shredded Monterey Jack cheese (500 mL)
  • 1 cup chunky salsa (250 mL)
  • 4 oz sliced cooked ham, chopped (125 mL)
  • 1/4 cup sliced green olives (50 mL)
  • 3 tbsp chopped fresh coriander or parsley (45 mL)
  • Directions
  • 1.

    Preheat the oven to 425°F (220°C).

  • 2.

    Arrange tortillas in a single layer on a large baking sheet. Sprinkle each one with 1/4 cup (50 mL) shredded cheese.

  • 3.

    Spread salsa over each, dividing evenly. Sprinkle with cooked ham and olives, dividing evenly.  Sprinkle with remaining cheese.

  • 4.

    Bake for about 10 minutes, until tortillas are crisp and cheese has melted.

  • 5.

    Sprinkle with coriander. Cut each pizza into 4 wedges; serve at once.
