Mini Pizza Bites

Once you get the hang of working with pizza dough, you can top it or stuff it with anything you fancy. Plus, it freezes well, so it's great to keep some on hand.

"The kids and I had a great time making these on a recent PD day. We loved the taste, but you have to make sure to seal them well so the cheese doesn't ooze out." - Vera Girard, Mom of Alexandra , 12, and Ethan, 9, St. Catharines, ONT.
Ingredients
  • 1 ball of pizza dough (680 gr)
  • 4 oz provolone or mozzarella cheese, cut into 24 cubes
  • 24 pepperoni slices
  • 1 1/4 cups of your favourite pasta sauce, divided
  • 2 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 3 tbsp grated Parmesan cheese
  • Directions
  • 1.

    Preheat oven to 400 °F. Spray a sheet pan with cooking spray.Cut off a small chunk of dough, about the size of a walnut. Flatten thinly onto your palm so that its about 2 ½ inches in diameter. Top with one pepperoni slice and one cube of cheese; begin folding in edges. Just before the last edge is sealed, tuck in a tiny spoonful of sauce and finish sealing. Place on pan, seam side down. Repeat with remaining dough, pepperoni, cheese and sauce.

    Mix together oil and Italian seasoning. Brush over bites and top with grated Parmesan.

    Bake 20 minutes or until golden brown. Serve with remaining warmed pasta sauce.

      Looks like a recipe I’d try! Being a diabetic I appreciate the nutritional values listed, thanks but it would also be more beneficial if you included what amount the serving size is! How many pizza bites make up one serving. In your current listed values I have no idea how many pizza bites equal 15g of carbs!

      I found that if you bake these at 350 degrees instead of 400, the cheese doesn’t seep out! Great recipe!
