Ingredients
1 pound lean ground beef or turkey1 chopped medium onion1 teaspoon chili powder1 teaspoon ground cumin1/2 teaspoons salt3 Cups cooked brown rice1 can pinto beans, drained (16 oz)2 cans diced green chilies (each 4 oz)1 seeded and chopped tomato (optional)shredded cheddar cheese (optional)1fresh cilantro for garnish (optional)
Directions
1.In large skillet over medium-high heat, cook meat until brown, stirring to crumble; drain fat. Add onion, chili powder, cumin and salt; cook until onion is tender. Stir in rice, beans and chiles; cook until heated through. Top with tomato, cheese and cilantro, if desired.
