Maple Walnut Cookies

Ingredients
  • 2 3/4 Cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 Cup unsalted butter (2 sticks)
  • 1 Cup packed brown sugar
  • 1/2 Cups sugar
  • 1 large egg
  • 2 teaspoons maple extract
  • 1/2 Cups walnuts, finely chopped
  • Directions
  • 1.

    In a medium bowl, combine the flour, baking powder, and salt and set aside.

    In a large bowl, beat the butter and both sugars with an electric mixer on medium speed (or with a whisk) until fluffy and light, about 3 minutes. Add the egg and maple extract and mix on medium speed until well combined, scraping down the sides of the bowl. Add the dry ingredients and nuts and mix on low or with a spoon until well combined.

    Divide the dough in half and form two logs about 2 inches in diameter. Wrap the dough logs in parchment paper and chill in the refrigerator until the dough is firm, at least 1 hour.

  • 4.

    Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.

  • 5.

    Slice the dough logs into 1/2 inch thick circles and place them 2 inches apart on the baking sheet. Bake for 15 to 16 minutes, or until the edges are brown. Let cool before serving.
