Maple Orange-Glazed Salmon

The omega-3s in salmon make it excellent brain food. Kids will get on side when they try this delicious sweet glaze.

Ingredients
  • 1/4 cup chopped green onions
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup defrosted orange juice concentrate
  • 1 tbsp minced ginger
  • 1 tsp minced lemon grass
  • 1/4 cup maple syrup
  • 1-1/4 lb centre-cut salmon
Directions
  1. Combine green onions, soy sauce, orange juice concentrate, ginger, lemon grass and maple syrup in a resealable freezer bag. Add salmon to marinade and shake to coat.

  2. TO FREEZE: Press out air and seal completely. Prior to cooking, defrost in refrigerator overnight.

  3. TO COOK: Preheat oven to 400F. Place fish in greased baking dish and brush with extra marinade. Bake for 12 minutes or until firm to the touch and fish flakes with a fork.
