Lime Chicken with Rice

Ingredients
  • 1 teaspoon salt
  • 1/2 teaspoons freshly ground black pepper
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 Cups finely diced onion
  • 2 tablespoons olive oil
  • 2 limes, zested and juiced
  • 11/2 Cups chicken stock
  • 4 servings cooked rice
  • Directions
  • 1.

    In a large bowl mix together salt, pepper, garlic, thyme and paprika.

  • 2.

    Mix chicken with spices until coated.

  • 3.

    In a large sauté pan over medium heat, cook onion in olive oil for 2-3 minutes until soft.

  • 4.

    Add chicken and cook for approximately 10 minutes or until cooked through.

  • 5.

    Remove chicken from pan and deglaze* by adding chicken stock and lime juice.

  • 6.

    Cook for a few minutes until sauce begins to thicken. Add chicken and stir, cooking for one more minute.

  • 7.

    Serve over warm rice and sprinkle with lime zest.
