Ingredients
  • 1 pound (500 g) freshly ground lamb
  • 2 tablespoons (30 ml) dijon mustard
  • 1 whole egg
  • 1 small onion, finely chopped
  • 1 bunch fresh mint, chopped
  • salt, milled pepper
  • 1/4 Cups (60 ml) mayo
  • 1/4 Cups (60 ml) Canadian sour cream
  • 3 tablespoons (45 ml) chopped chives
  • Tabasco Sauce, to taste
  • 1salt, milled pepper
  • 2 Cups (500 ml) baby arugula
  • 3 ciabatta loaves
  • 12 slices Canadian Brie

    Preheat the grill

  • 2.

    In a mixing bowl, combine all ingredients for the patties (lamb, dijon mustard, egg, onion, mint, salt and milled pepper).

    Salt and pepper generously. To check seasoning, cook a 2-tbsp ball of the meat preparation.

  • 4.

    Prepare 6 equal-sized patties and set aside.

  • 5.

    Halve ciabatta loaves crosswise to get 6 burger-size buns and slice them open.

  • 6.

    In a light oiled frying pan or on the grill, quickly brown each side of the patties and cook for an extra 5 to 6 minutes.

  • 7.

    Meanwhile, butter the inside of the buns and grill or pan-fry lightly until golden. Combine dressing ingredients in another mixing bowl (mayo, Canadian sour cream, chives, Tabasco sauce, salt and milled pepper).

  • 8.

    Set patties on absorbent paper to remove excess drippings, then assemble burgers with slices of Canadian Brie, arugula and the dressing.
