Place first five ingredients in a large bowl with freshly ground pepper and whisk to combine. Fold through lamb, mint and peas.
In a non-stick pan heat two tablespoons oil over medium heat. Add 1/3 cup of mixture and cook, in batches, for 1-2 minutes each side or until lightly browned. Set aside and keep warm.
Add remaining oil to pan and repeat with remaining mixture. Serve with tomato relish.
