Lamb, Pea & Mint Fritters

This savoury and sweet combination is a perfect casual dinner. Add a green salad to round it out.

Ingredients
  • 1 Cup self-rising flour, sifted
  • 2 eggs
  • 1-1/2 tablespoons butter, melted
  • 1/3 Cups milk
  • pinches sea salt
  • 7 ounces cooked lamb, sliced
  • 1/4 Cups chopped mint leaves
  • 1 Cup frozen peas
  • 4 tablespoons vegetable oil
  • 1Store-bought tomato relish, to serve
  • Directions
  • 1.

    Place first five ingredients in a large bowl with freshly ground pepper and whisk to combine. Fold through lamb, mint and peas.

  • 2.

    In a non-stick pan heat two tablespoons oil over medium heat. Add 1/3 cup of mixture and cook, in batches, for 1-2 minutes each side or until lightly browned. Set aside and keep warm.

  • 3.

    Add remaining oil to pan and repeat with remaining mixture. Serve with tomato relish.
