Krupso

These little fellows of Finnish descent puff up in the oven just like a Yorkshire pudding. Once they fall, load them up with fresh berries. Alternatively you can make one large krupso in a 9- x 13-inch cake pan.

Ingredients
  • 3 eggs
  • 2 Cups milk
  • 1/2 Cups granulated sugar
  • 1 teaspoon salt
  • 1-1/2 Cups all-purpose flour
  • 1/4 Cups unsalted butter, melted
  • 1/2 Cups oat bran
  • Directions
  • 1.

    Preheat oven to 375 F.

  • 2.

    Whisk eggs and milk together and set aside.

  • 3.

    Mix dry ingredients in a separate bowl.

  • 4.

    Add half milk/egg mixture to dry and mix until smooth.

  • 5.

    Add remaining milk/egg mixture plus 2 tablespoons of melted butter.

  • 6.

    Divide remaining butter into muffin cups, then fill muffin cups with batter.

  • 7.

    Bake for about 25 minutes or until golden.
