Ingredients
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 tablespoon fresh thyme and rosemary (optional)
  • 1 pound lean ground beef
  • 1 teaspoon chili powder
  • 1/2 Cups tomato paste
  • 1 can tomatoes, chopped, drained
  • 1 can red beans
  • 1 can corn
  • 11/3 Cups fresh cilantro, chopped
  • 1/2 Cups cheddar cheese, shredded
  • 1 ripe avocado, sliced
  • 1 Cup nacho chips
  • Directions

    In a frying pan add olive oil, onion, garlic, thyme and rosemary. Add beef and cook until browned.

    Meanwhile, put corn and tomatoes into a large pot and cook over medium heat. Add tomato paste, beans, cilantro and chili powder. Stir in beef mixture.

  • 3.

    Cook until heated and flavours mix together.

  • 4.

    Garnish with cheddar cheese and avocado pieces sprinkled on top. Serve with a side of nacho chips.
