Halibut With Fresh Tomato Sauce

Sauce up your seafood with this flavourful combination of fresh halibut and tomatoes. This recipe also works well with salmon, sole, cod or tilapia.

Ingredients
  • 2 large ripe tomatoes, diced
  • 1/4 Cups fresh basil, chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 lemon, juice of
  • 1 tablespoon garlic, minced
  • 4 halibut steaks
  • 3 tablespoons vegetable oil
  • salt and pepper to taste
  • Directions
  • 1.

    Combine tomatoes, basil, olive oil, vinegar, lemon juice and garlic in a bowl, set aside.

  • 2.

    Rub fish with vegetable oil and season with salt and pepper.

  • 3.

    Grill fish over medium-high fire about 5 minutes per side or until fish springs back when pushed with a finger.

  • 4.

    If a barbeque is not available, cook on hot oil in a skillet for 3 minutes on each side and then put the skillet in the oven and cook for an extra 5-10 minutes.

  • 5.

    Spoon some tomato sauce on 4 plates.

  • 6.

    Put fish on sauce.
