Guiltless Potato Salad

Everyone loves this mayo-free potato salad, anytime of the year.

Ingredients
  • 1 pound cooked, unpeeled red potatoes, cubed
  • 1/4 Cups celery
  • 1/4 Cups green onions
  • 3 tablespoons chopped fresh dill
  • dashes salt
  • dashes pepper
  • 1/4 Cups light ranch dressing
  • Directions
  • 1.

    In a large saucepan, cover potatoes with water and boil until fork-tender (about 12 minutes).

  • 2.

    Meanwhile, chop celery, green onions and dill.

  • 3.

    Drain potatoes and cool in cold water for a few minutes.

  • 4.

    Mix all ingredients gently with rubber spatula until potatoes are coated.
