Ingredients
  • 8 ounces tortilla chips
  • 12 ounces monterey jack cheese, grated
  • one 12-ounce jar salsa
  • cans chopped green chiles
  • cans chopped jalapeno chiles
  • Directions
  • 1.

    Prepare enough coals for a hot charcoal fire, or preheat you gas grill on high for 10 minutes witht the lid closed.

  • 2.

    While the grill is heating up, arrange the tortilla chips in a large cast iron or other oven-saft skilllet. Top the chips with the grated cheese. Spoon the salsa over the cheese, distributing it evenly. Scatter the green chiles and jalapenos over the top.

  • 3.

    When the coals are ready or the gas grill is hot, place the skillet on the center of the grill and let the nachos heat up until the cheese has melted, 4 to 6 minutes. Remove the pan from the heat and serve the nachos in the skillet, making sure you put a hot pad over the handle so no one grabs it by mistake.

    If you don't have an appropriate skillet that can go on the grill, make a kind of schooner out of doubled-up aluninum foil and use that instead.
