Ingredients
pasta salad1 package(375 g) rotini noodles1 Cup (250 ml) canadian swiss cheese, diced1/2 Cups (125 ml) chopped dried apricots1/2 Cups (125 ml) chopped dates1/2 Cups (125 ml) sliced almonds1 unpeeled apple, cubed1/4 Cups (50 ml) chopped raw baby spinachfresh mint to garnish (optional)vinaigrette11/3 Cups (75 ml) orange juice1/3 Cups (75 ml) olive oil1/4 Cups (50 ml) rice vinegar1 teaspoon (5 ml) zest of orange1 tablespoon (15 ml) liquid honey
Directions
1.Vinaigrette
2. To make the vinaigrette, whisk together in a bowl orange juice, olive oil, rice vinegar, orange zest and honey.
3.Pasta Salad
4. In a saucepan, cook pasta according to package directions. Drain and rinse under cold water. Refrigerate for about 10 minutes. Combine pasta, apricots, dates, almonds, apples, spinach and Canadian Swiss cheese.
5.Add vinaigrette to the pasta salad and mix well. Serve garnished with fresh mint if desired.
