Ingredients
  • 2 cups whole-wheat flour
  • 1 cup quick-cooking oats
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 1/4 cup flax seeds
  • 2 tsp cinnamon
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp salt
  • 3/4 cup packed brown sugar
  • 1/4 cup butter
  • 2 eggs
  • 1 1/4 cups soy milk
  • 2 tsp vanilla
Directions
  1. Preheat oven to 350 F.

  2. Grease a 9x9-inch pan.

  3. Whisk together flour, oats, cranberries, walnuts, flax seeds, cinnamon, baking powder and salt in a bowl.

  4. In a separate bowl, cream brown sugar and butter together. Whisk in eggs until completely incorporated. Add in soy milk and vanilla.

  5. Add dry ingredients and stir until combined.

  6. Pour into prepared pan and bake for 30 minutes or until a tester comes out clean.

  7. Let cool in pan then cut into bars.

Nutrients Per Serving

220 calories, 8 g fat, 28 mg calcium, 61 mg sodium, 34 g carbohydrates, 5 g fibre, 5 g protein. Excellent source of manganese and fibre. Good source of magnesium and phosphorus. Source of calcium, folate, iron, phosphorus and zinc.
