cucumber and mango in Slammin’ Sushi Rolls

Ingredients
  • 1/2 Cups cooked short grain rice (brown or white)
  • 1 tablespoon seasoned rice vinegar
  • 2 teaspoons toasted sesame seeds
  • 2 sheets nori (roasted seaweed)
  • 2 slices southern u.s. cucumber (about 8-inches)
  • 4 slices southern u.s. mango
  • 4 blanched southern u.s. green beans
  • 4 slices red bell pepper
  • Directions
  • 1.

    In bowl, using rice paddle or fork, stir together cooked rice, rice vinegar and sesame seeds. Set aside.

  • 2.

    Arrange one sheet of nori on a bamboo sushi mat or a piece of parchment. Spread half of the rice mixture in a 1-inch strip along the bottom edge of the nori. (Using wet fingertips makes this much easier.) Arrange half of the cucumber, mango, green beans and red pepper lengthwise, on top of the rice. Using the mat or parchment as a guide, roll up nori to surround rice and vegetables to make a long thin tube.

  • 3.

    Using a very sharp, wet knife (wetting the knife in between cuts will prevent the nori from tearing), cut each roll into 6 pieces. Repeat with remaining ingredients to make another roll.

  • 4.

    Serve with teriyaki sauce, wasabi and pickled ginger if desired.
