Ingredients
  • 1/4 Cups sliced almonds
  • 2 tablespoons unsalted butter
  • 2 scallions, thinly sliced, including green tops
  • 2 tablespoons capers, drained
  • 1 clove garlic, minced
  • 3/4 Cups sour cream
  • 2 tablespoons chopped fresh cilantro
  • 1 1/2 teaspoons fresh lime juice
  • 1/2 teaspoons fresh grated lime zest
  • pinches of ground cayenne pepper

    Place almonds in a single layer in a dry skillet, and turn heat to medium. Toast for about 2 minutes, stirring occasionally and then set aside. Melt the butter in a medium skillet over medium heat. Add the scallions, capers and garlic, and cook, stirring constantly, 1 to 2 minutes or until scallions are softened but retain their bright green colour.

    Transfer mixture to a medium bowl and cool slightly. Stir in sour cream, almonds, cilantro, lime juice, lime zest and cayenne.
