Chili Basil Stir-Fried Shrimp

Ingredients
  • 1 tablespoon vegetable oil
  • 4 large red chilies, seeded and sliced
  • 2 teaspoons grated ginger
  • 2 pounds peeled uncooked shrimp, tails intact
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh lime or lemon juice
  • 1 Cup fresh basil leaves

  • 1.

    Heat a frying pan or wok over high heat.

  • 2.

    Add the oil, chilies and ginger and cook for 1 minute.

  • 3.

    Add the shrimp and cook for 1 minute.

  • 4.

    Combine the fish sauce, sugar and lime or lemon juice and pour over the shrimp.

  • 5.

    Cook, stirring, for 3 minutes or until the shrimp are just cooked through.

  • 6.

    Stir in basil and serve with steamed greens and rice.
