Ingredients
prepared salsa, optional1/2 Cups chopped onion1 clove garlic, minced1 tablespoon vegetable oil1 can (14 oz.) chicken broth1 Cup quinoa, rinsed and drained2 tablespoons chopped anaheim pepper1/2 teaspoons salt1/4 teaspoons ground pepper2 Cups pitted northwest fresh, sweet cherries, i.e., rainier and bing8 ounces small cooked peeled shrimp11/4 Cups chopped parsley
Directions
1.Sauté onion and garlic in oil; add broth, quinoa, Anaheim pepper, salt and ground pepper.
2.Bring mixture to boil, reduce heat, cover and simmer 12 to 18 minutes or until all liquid is absorbed.
3.Fluff mixture with a fork and gently stir in cherries, shrimp and parsley. Serve with salsa, if desired.
