Bacon-Wrapped Glazed Pork Loin

Ingredients
  • 2 tablespoons brown sugar
  • 1 teaspoon kosher salt
  • 1/2 teaspoons sweet spanish paprika
  • 1/2 teaspoons fresh thyme leaves (or 1/4 tsp dried thyme)
  • 1/4 teaspoons chili powder
  • 1/4 teaspoons ground black pepper
  • 1/4 teaspoons ground cumin
  • 1 teaspoon chopped garlic
  • 1/2 teaspoons finely grated lemon zest
  • 2 pounds boneless pork loin
  • 16 slices bacon (approx)
  • 1 tablespoon maple syrup
  • 2 teaspoons apple cider vinegar

    Preheat oven to 400°F. Line a rimmed sheet pan with foil and set aside.

    In a small bowl, combine brown sugar, salt, paprika, thyme, chili powder, black pepper and cumin. Reserve half of mixture for later use in glaze. Add garlic and lemon zest to remaining spice mixture, stir well and rub all over pork roast. Transfer pork roast to prepared sheet pan. Lay strips of bacon crosswise around pork, wrapping down sides and tucking underneath. Roast until instant read thermometer inserted into the thickest part of the roast registers 120°F, about 30 minutes.

    Add maple syrup and apple cider to reserved spice mixture and stir well. Glaze top and sides of roast with mixture and return to oven until thermometer registers 150°F, about 20 minutes more. Remove from oven, tent roast loosely with foil and rest 5 to 10 minutes before carving.
