Heat a large non-stick skillet or non-stick griddle over medium heat. When skillet is hot, brush lightly with vegetable oil. Using a ¼ cup (50-mL) measure, pour batter into skillet to make individual pancakes, spacing them so they don’t touch. Cook for 1 ½ to 2 minutes, until bottoms are golden and bubbles start to form. Turn pancakes; cook for 30 to 60 seconds, until golden. Repeat with remaining batter, brushing griddle with more oil as needed.
