Winter Slaw
serves:6
- 1/4 cup vegetable oil
- 1/4 cup apple cider vinegar
- 3 tbsp brown sugar
- 2 tsp kosher salt
- 1 tsp poppy seeds
- 6 cups Savoy cabbage, cored and finely shredded
- 1 1/2 cups celery root, peeled and coarsely grated
- 1 cup carrot, coarsely grated
- 1/4 cup red onion, finely chopped
- In a small bowl, whisk oil, vinegar, sugar, salt and poppy seeds together until well blended and sugar is dissolved.
- In a large bowl, pour vinaigrette over remaining ingredients. Toss until thoroughly blended. Chill at least 30 minutes to allow flavours to meld. Serve alongside stuffed burgers.
