Mint-Chocolate Chip Cupcakes: They’re Healthier Than You Might Think!

Confession: we love cupcakes. Around this office, cupcakes are a go-to choice when we’ve got something special to celebrate. Unfortunately, we know that too many cupcake celebrations won’t do our waistlines (or our wallets!) any favours. But with this yummy Mint-Chocolate Chip Cupcake recipe from Katie, the health-minded foodie behind Chocolate-Covered Katie: The Healthy Dessert Blog, we feel a little less guilty indulging a cupcake craving.

At 130 calories each, these cupcakes won’t put a huge dent in your diet. Katie suggests sneaking in a little bit of spinach for an added kick—and we bet kids won’t even notice it’s there!

What you’ll need:
• Cocoa powder
• Flour
• Baking powder
• Baking soda
• Salt
• Sugar
• Cornstarch
• Vanilla extract
• Peppermint extract
• Vanilla yogurt (preferably non-dairy)
• Applesauce
• Canola oil
• Almond (or other non-dairy) milk
• Chocolate chips (optional)
