Stay Cool This Summer with Homemade Popsicles

If you’ve been brave enough to face the heat this week, one thing’s clear: it is hot. Very hot. So to cool off and indulge in a tasty yet very nutritional snack, we were inspired by these Orange-Banana Smoothie Pops from Country Living. And with only 72 calories per pop you may find yourself heading to the freezer for seconds.

Ingredients
• 1 container (7-ounce) Greek yogurt
• 2/3 cup thawed orange juice concentrate
• 2 large bananas
• zest of lime
• 1 tbsp fresh lime juice

To make the popsicles, puree the Greek yogurt, thawed orange juice concentrate, bananas, lime zest, and fresh lime juice in a blender. Pour the mixture into six 3-ounces moulds. Country Living used mini baking tins with Popsicle sticks but you can also use paper cups instead. Freeze until smoothie pops are solid, about 4 hours. To release the pops, dip moulds into hot water until pops loosen and slide out. If you used paper cups, gently peel away the paper.

CF helpful tip: to keep your Popsicle sticks upright while the pops freeze, place a piece of tin foil or plastic wrap over the tops of your moulds or paper cups. Using a sharp knife, cut a small slit in the middle and slide the Popsicle stick through. Voila! Your pops will now freeze around a perfectly placed stick.
