Cream Cheese and Salmon in a Flax Wrap
Spread cream cheese in a thin layer over the flax wrap. Top with 2 to 3 slices of smoked salmon. Add a handful of watercress. Roll up, then wrap each in wax
paper, twisting ends to secure.

Preheat oven to 350°F. In a bowl, beat 1 cup each of butter and brown sugar and ½ cup sugar until light and fluffy. Beat in 2 eggs one at a time, scraping down sides after each. Add 1 tsp vanilla. In a separate bowl, combine 1 ¾ cup whole wheat flour, ¾ cup ground flax, 1 tsp baking powder and ½ tsp each of baking
soda, cinnamon and salt. Stir in ¼ tsp nutmeg and allspice, then add 1 cup raisins. Add dry ingredients to creamed mixture, combining thoroughly. Spoon 1 ½ tbsp of batter onto a greased sheet pan. Bake for 10–12 minutes or until lightly browned. Let cool on baking sheet a few minutes prior to moving to rack. Makes 3 dozen cookies.
