•Baked Egg Pizza Muffin with Omega-3 Eggs and Enriched Cheese
Preheat oven to 375°F. Grease a 6-muffin tin. Tear 1 slice of whole grain bread into chunks and put in the bottom of each cup. Add 3 slices of pepperoni, a few slices each of chopped green onion and cherry tomatoes to each cup. In a bowl, whisk 6 omega-3 eggs. Season with salt and pepper. Divide eggs between muffin cups. Grate 2 oz. of omega-3 enriched mozzarella and top each muffin with cheese. Bake for 20 minutes or until set and a tester comes out clean.

•Oat Bars with Pumpkin Seeds and Flax
Preheat oven to 350°F. Grease 9 x 13 baking pan. In large bowl, mix together 2 cups quick cooking oats, ½ cup each brown sugar and ground flax, 1 tsp cinnamon, 1 cup whole wheat flour, ½ cup each pumpkin seeds and dried cranberries and ½ tsp salt. In another bowl whisk together ½ cup honey,
1 egg and ½ cup canola oil. Pour wet ingredients over dry and mix well. Pat the mixture evenly into the pan. Bake for about 20 minutes or until lightly browned and set. Cool for 15 minutes, and then cut into 18 bars.
